Deanston - 2002 - 17 Year Old Organic PX Cask Finish Limited Edition Single Malt Scotch Whisky.
This is a very interesting and recent release Limited Edition from Deanston Distillery.
Only the 3rd Organic whisky ever launched by Deanston and the 2nd Organic Limited Edition.
This single malt represents 17 years well spent, made with organically sourced barley, the first 14 of which were spent in whisky refill casks. During the finishing, it developed a delicious sweetness, with notes of caramel, maple syrup and sherry soaked raisins.
Distilled and filled into whisky re-fiill casks on 18th December 2002.
Transferred into Organic PX Casks 5th of May 2016
Un-chillfiltered and bottled at a strength of 49.3% abv.
Limited bottling of 2,505 bottles.
Colour: Burnished copper.
Nose: : Very dry, slightly sulphury notes roll back to reveal sweet dried fruits, raisins and dates.
Palate: : Sweet caramel, mouth coating maple syrup, mixed candied peel and sherry soaked raisins
Finish: Long sweet finish, fading to honeyed cashews.
The story begins in 1785 with the opening of Deanston Cotton Mill. The mill was at the very heart of the community, providing employment to around 1500 people. The mill flourished and as the workforce grew, a self contained village was created, with housing and grocers - buildings which continue to form the center of modern day Deanston. The village and community were so self contained they even had their own currency; due to a shortage of currency during the Napoleonic wars, French and Spanish coins were stamped and known as ‘Deanstons’.
Changing times meant Deanston Cotton Mill had to close but in 1965 the Mill found a new life as the home of Deanston hand crafted Highland Single Malt Scotch Whisky. Situated on the banks of the River Teith, powered by sustainable energy, with an abundance of clear, soft water and a cool, bespoke Weaving Shed, perfect for whisky maturation, Deanston Distillery was born.
True to its heritage, Deanston still values traditional, handcrafted techniques. No modern technology is used and only the best local ingredients are sourced.
